Yogourt sauce

1. Add 3 pinches of fancy pepper to 500 ml of plain yogourt.
2. Thinly slice a green onion and a clove of garlic.
3. Mix well and enjoy on your favorite meats.

Fancy marinade
for fresh salmon

A tender and onctuous salmon cooked in a dry marinade. A Scandinavian cuisine classic. These herbs and freshly grounded spices are perfectly balanced to slightly flavor fish.

Dry marinade for Gravlax. La pincée® is developed in Quebec with top quality ingredients without artificial colorings, preservatives or artificial flavors.

You can use the marinade with salmon, trout or even arctic char.

Impress your guests with this original entrée requiring only two key ingredients: a fresh boneless filet of fish with the skin and Gravlax La pincée's dry marinade.

Enjoy Gravlax finely sliced, as an entrée on fine crackers with a dash of dill sauce or as a main course with a side dish of potatoes au gratin, tiny gherkins and a fresh crisp salad.

ingredients: sea salt, guerande salt, raw cane sugar fresh grilled and ground spices, black pepper.


Separate your salmon in two equal parts. Then brush the flesh with your favorite alcohol. Sprinkle enough of the La pincée Gravlax marinade on both pieces. 3 tablespoons for 14 ounces of salmon. Cover surface well and rub in. Close up flesh to flesh.

Wrap the fish in plastic and put it into a shallow bowl. Add a weight on top (brick, can on a plate) refrigerate and let the marinade work it's magic for 3 days. Enjoy thinly sliced on rye bread or fine crackers.

What you need

· Thick filet of fresh salmon boneless with skin
· Spirits alcool (optional), scotch whisky, rhum, gin, rye.
· Dry marinade for Gravlax La pincée®

Dill sauce to serve with Gravlax La pincée®

For 150 ml. of sauce; preparation 10 min.

· 2 tablespoons Dijon mustard
· 3 dill stems
· 1 fresh lemon
· Salt and pepper
· 1 tablespoon sugar
· 125 ml sunflower oil

1. Clean, dry and chop dill.
2. Mix all the ingredients, except oil.
3. Add a spoonful of lemon juice.
4. Add the oil while whisking.
5. Taste and add a bit of lemon juice if needed.

Vodka sour cream sauce

For 100 ml of saucee

. 60 ml (1/4 cup) 35% cream
. 7ml (1 1/2 teaspoon) lemon juice
. 20 ml (4 teaspoons) vodka

1. In a bowl whip the cream as to keep it slightly liquid.
2. Add the lemon juice and vodka.
3. Mix well.
4. Adjust seasoning to taste.

A drink with your Gravlax?

We highly recommend fruity, elegant Riesling! Since it's a matter of taste, we also suggest a dry white wine or even a rosé such as the following: Cour-Cheverny, Bourgogne Aligoté, Bouzeron, Bourgogne Chardonnay, Champagne et Crémants Blanc de blancs, Alsace Sylvaner.

Stylish dressing
for grilling

Barbecue spices La pincée® will be the ultimate companion to all barbecue chefs.

It's perfect mix is ideal for beef, pork and chicken. Slightly coat all meats to enhance caramelized flavors and tasty grilling.

La pincée spices are 100% natural and contain no additives or preservatives.

ingredients: sea salt, raw cane sugar, black pepper, paprika, cumin (caraway), dry & fresh ground spices.


Coat the meat with a splash of olive (or vegetable oil) and add enough spices to lightly cover.

We recommend you sprinkle La pincée® Barbecue spice mix an hour prior to grilling. The result is perfect caramelizing.

Coriander sauce

Perfect companion to grilling

· 1 large bouquet of fresh coriander
· Half a bouquet of parsley
· 1/4 cup olive oil
· 2 teaspoons red wine vinegar
· 2 teaspoons fresh lemon juice and a touch of zest
· 1/4 teaspoon ground cayenne pepper Tabasco flavored
· 1 garlic clove · 1 shallot

1. Wash and dry the herbs well.
2. Mix in a blender with olive oil, vinegar and lemon juice.
3. Finely chop garlic and shallot.
4. Mix together in a bowl and add the cayenne pepper.

Zucchini ribbon salad

For four

· 3 green zucchinis, thinly sliced lengthwise
· 1 garlic clove
· 1 tablespoon lemon juice
· 10 finely chopped basil leaves
· 1 pinch fancy pepper
· drizzle of olive oil

The creation of the spices collection La pincée are the result of more than 10 years of culinary experience and design. We are Catherine de Gongre, chefs and culinary conceptor and François Maisonneuve, art director, designer and photographer. We want to share our passions, curiosity and our inspirations with an original and subtle collection of our true favorite refined blends.

We have developed instinctively over time, a nose and expertise that allows us to compose original spice blends that resemble us. Raw materials are in the spotlight in everything we do.
