Maïs grillés au beurre aromatisé 3 façons

 

Long live corn!

Boiled, steamed, fried or grilled, shelled or "in a stick", there are many ways to enjoy Quebec's precious corn. Plain or with a good amount of butter, a pinch of salt and/or spices, it makes us happy as soon as August is well underway. A true delight that inspires celebration and gatherings.

 

Speaking of butter, why not take the experience further? Here are some great suggestions for inventive combinations to create three different delicious butters to brush on, not to mention on delicious cobs grilled on the barbecue. Your traditional corn roasts will never be the same again!



The ingredients

1. Grilled corn with herb and lime butter

· 4 to 6 ears of fresh corn, peeled
· 6 tbsp butter
· ½ tsp La pincée Classique Nº1 , or more to taste
· 1 tbsp of La pincée Été Nº7 mix
· the zest of 1 lime

2. Grilled corn with tomato and spicy butter

· 4 to 6 ears of fresh corn, peeled
· 5 tbsp butter
· 1 tbsp tomato paste
· ½ tsp of La pincée Pimentée (limited edition) , or more to taste
· 1 tbsp maple syrup

3. Grilled corn with miso sea butter

· 4 to 6 ears of fresh corn, peeled
· 5 tbsp butter
· 1 ½ tbsp white miso paste
· 1 tsp of La pincée de l’Anse mix, or more to taste
· 1 dash of lemon juice
· a few flakes of nori or other dried seaweed (optional)

 

 

The procedure to follow...

Preheat the barbecue to high. Meanwhile, peel the cobs and melt the butter. Add the other ingredients and the desired pinch of mixture(s).
Brush the corn with the flavored butter and place on the grill. Grill for a few minutes, turning the corn occasionally to ensure even cooking. Brush the corn again at least once during grilling. The corn is ready when it begins to char in some spots, about 10 to 12 minutes.

Gather the ears on a serving platter and brush with the remaining butter mixture. Drizzle with a squeeze of lime or lemon juice if desired. Finish with a sprinkle of the mixture(s) used. Serve immediately.

Note

For this cooking technique to be successful, you need very fresh and juicy corn. To prevent the corn from drying out too much on the grill, you can pre-cook it for 3 minutes in a large pot of boiling water and then grill it.
