Minis meringues with La pincée Sucrée Nº3 , what a joy to share!
· 4 white eggs
· 1/2 cup and 1 tbsp. tablespoons fine cane sugar
· 1 and 1/4 cup powdered sugar
· La pincée Sucrée Nº3
The how to...
Break the eggs and separate the yolks from the whites. Pour the egg whites in a clean bowl. Mix the preparation 2 minutes with a mixer. Add the granulated sugar and mix again for 10 minutes.
Pour in two parts the sifted caster sugar when the whites are well set, smooth and firm. Stir well with a wooden spoon to incorporate well.
Place the mini meringues on a large pan covered with parchment paper using a pocket and a small pastry socket. Sprinkle each with a La pincée Sucrée Nº3 and bake at 225ºF for 4 hours. Enjoy !
