Gourmet biscuits with thyme, almonds, chocolate and La pincée Classique Nº1. It's hard to stop eating it!
1/2 cup unsalted butter
1/2 cup fine cane sugar
· 1 egg
1 1/2 cup flour
1/2 cup almond flour
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1 tablespoon applesauce (optional but will help keep the center of the cookies subtly moist)
1/2 cup chocolate chips
3 sprigs of fresh thyme, stripped
1 pinch of La pincée Classique N°1
A few slivered almonds to garnish
Makes about 22 cookies. Preheat the oven to 350°F
In a bowl, cream the butter and sugar with a hand mixer. Add the egg and beat for a few seconds. Add the other ingredients and stir well until the batter is smooth. Using a teaspoon, form balls of dough and place on a baking sheet lined with parchment paper. Bake for about 12 minutes or until cookies are tender.
The Classic N°1 pinch is a mixture that is easy to integrate into everyday recipes. It is appreciated for its crunchy sea salt with the aromas of the bouquet garni with a lively dominant of thyme. Here it is perfectly integrated into a recipe for lightly shortbread and aromatic gourmet biscuits.
